
Strawberry & Chocolate Cake

Step-by-step instructions
Step 1
Preheat oven to 180 degrees top/bottom heat (convection oven: 160 degrees). Line a springform pan (Ø 24 cm) with baking paper.
Step 2
Beat eggs with sugar and pinch of salt for about 7 min. on highest speed until thick and creamy. Mix flour, cocoa and baking powder and sift into the egg mixture. Fold in carefully. Pour the batter into the pan and bake in the preheated oven for about 25 minutes. Do not forget to test with a stick. After baking, remove directly from the pan and turn out onto a cooling rack.
Step 3
Allow to cool completely. Cut the chocolate sponge cake once horizontally. Place bottom layer on a cake plate and enclose with a cake ring. For the filling, wash strawberries, clean, pat dry and cut into small cubes. Mix yogurt, quark, powdered sugar, vanilla sugar and lemon juice until smooth.
Step 4
Soak gelatin in cold water, place dripping wet in a small saucepan and melt over low heat. Do not boil. Add 2-3 tablespoons cream to gelatin and stir to cool down. Add gelatin mixture to remaining cream and stir until smooth. Whip cream until stiff and fold into cream. Fold in the strawberry cubes.
Step 5
Pour the cream on the base, smooth it and put the 2nd base. Chill in the refrigerator for at least 4 hours, preferably overnight. For the drip cake, carefully remove from the ring. Chop chocolate and melt over a hot water bath. Remove from water bath. Stir in butter. Stir until chocolate has reached a thick consistency.
Step 6
Using a teaspoon, run the chocolate down the side of the cake. Pour the rest of the chocolate onto the cake and smooth it out. Wash strawberries, pat dry, cut in half if desired, and place on top of cake. The cake makes about 12 pieces.
